Green Moong Daal – Gingery Perfection

Green split moong beans are hearty, and the fiery ginger soothes the throat. This winter daal recipe from Central India warms you inside out.

Notes:

Double the ginger for an extra kick and use parsley or mint instead of cilantro for a change.

Ingredients

½ cup split green moong/mung beans (green moong daal)

2 Tbsp oil

1 Tbsp grated ginger

1 tsp mustard seeds

Pinch of hing or Asafetida

½ tsp turmeric optional

½ tsp cayenne pepper

½ tsp goda masala or garam masala

1 tsp jaggery or sugar

Salt to taste

2 Tbsp chopped coriander or cilantro
